Roasted Asparagus

I love asparagus and have tried different ways of preparing it. This is an easy and delicious recipe from “The Romney Family Table” by Ann Romney.

1 bunch asparagus

1 tablespoon olive oil

1/2 cup grated Parmesan cheese

Salt and pepper

Heat oven to 400 degrees. Cut ends off asparagus. Toss asparagus spears in olive oil and spread on baking sheet in single layer. Sprinkle with Parmesan cheese, salt, and pepper. Roast 10 minutes.

Like I said, easy and delicious! Sometimes I even add some minced garlic to the recipe 🙂
